Well-drained chalky clay soils with plenty of pebbles, warm up quickly.
The powerful, well-structured “Folatières” wines are the second greatest wine in the world, after the Montrachet. Aromas of white blossom, honey and almonds. Great finesse and beautifully long on the palate.
The Puligny whites have a long lifespan: they reach their peak at between 6 and 8 years and this “Les Folatières” Premier Cru will exceed this under excellent storage conditions.
These fine white wines are just meant for fine cuisine, for their noble bouquet and their straightforward, supple and elegant flavours. Large shellfish in a court bouillon, poached fish in creamy sauce, creamy chicken au gratin “Gaston Gérard” and some cheeses: any kind of blue, mature Comté and Munster.
